JBT is highlighting a range of cutting-edge solutions for meat, poultry and dairy processors in Mexico and Central America at one of the region’s leading trade exhibitions for the protein sector, Expo Carnes & Lácteos 2019, which takes place from February 26-28 in the northern Mexican city of Monterrey.
Previously focused primarily on the meat industry, the biennial event now incorporates the dairy and poultry sectors and is attracting increasing numbers of industry delegates from across Mexico and Central America, presenting a valuable forum for JBT’s recent innovations, according to JBT’s Fernando Boulton.
One such innovation is the Frigoscandia SuperCONTACT® Contact Crust Freezer (above), an ingenious method of mechanical refrigeration which gives a superficial crust to red meats, poultry and other delicate, shape-sensitive, sticky products before final full freezing. The chief advantage of this system, Boulton explains, is that it helps maintain product shape and appearance, while also helping prevent weight loss due to dehydration, and the costly loss brine previously injected into the product.
Also for the same industry are JBT’s equipment for preparing brine (salt and water) solutions that are commonly used to enhance red meat and poultry products at optimum conditions, including the JBT Wolf-tec Polar Dissolver, a mixing tank designed to mix, chill and transport brines and marinades.
This is complemented by JBT Wolf-tec brine injection technology from the IMAX SMARTline Injectors through to the IMAX Conveyor Belt Injectors; the industry standard for performance, consistency, and reliability.
