Producing a high-quality smoked or dry sausage is a slow process usually limited by available space in smoke houses and drying rooms. But how can this cycle be speeded up without compromising on quality and food safety?

The answer lies with JBT Tipper Tie’s TTStick, a revolutionary automated hanging system that can get 25% more product onto a rack.

The TTStick, which will be on show at the American Association Of Meat Processors Convention from August 1-3, 2024 in Omaha, NE, makes use of simple yet effective automated suspension technology to hang up to 100 loops of sausage per minute.

The latest in Tipper Tie’s successful line of high-speed Automated Hanging Systems, the TTStick combines state-of-the-art automated suspension technology with highly intuitive, user-friendly controls. The result is a solution which not only saves on labor and reduces ergonomic issues, but also boosts productivity and even helps improve sausage quality by limiting human intervention during the production process.

Maximizing smoke house space

Instead of being constrained by how much product they can get into a drying room or smoke house, the TTStick allows customers to put more onto a smoke stick while also maintaining optimum space. 

JBT Tipper Tie’s Director of Product Management, Conrad Faust, says for hung products, such as pepperoni and salami, the TTStick’s ability to get more product onto a stick while also removing the human element is helping many customers to substantially increase production.

“As space is the bottle neck in smoke houses and drying rooms, 25% more product on a rack can have a very big impact for our customers,” he says.

Another benefit of the TTStick is that it helps preserve the growth of beneficial molds on which a great deal of salami production depends. Human handling can adversely affect the development of these molds and also result in the inconsistent spacing of hung products. “The less handling, the less human intervention, the better for truly high-quality salami production,” says Faust.
